My daughter makes a dish that she calls “breakfast in a bowl”. Actually to be more accurate breakfast in a tupperware container. This breakfast is perfect for on-the-go busy folks. You can make it the night before and take it to work the next day.

2 eggs

2 slices of bacon

sliced jalapenos

grated cheddar cheese

1/2 an avocado

Knob of butter

Fry the bacon until it’s crispy and make scrambled eggs using a knob of butter, salt and black pepper. Chop up the bacon and mix with the scrambled egg. Slice the avocado and add to the eggs. Top with sliced jalapenos and grated cheddar. Can be eaten cold or put in the microwave for 50 seconds to heat up. Don’t microwave too long otherwise you’ll end up with dry eggs.
