I’m not going to make you scroll through pages of text to get to the keto quiche recipe, that drives me crazy when I am looking for a recipe so I’ll get straight to it. Who doesn’t love a quiche and it’s even better now it’s a keto quiche!

I am probably the biggest fan of www.dietdoctor.com and have used it from the beginning. In fact because I don’t provide meal plans or recipes I always point clients there. It’s especially good for Europeans because they have metric measurements. Win Win!!!

I’ve used the recipe before and it turned out perfectly but I didn’t really like the base with the sesame in it, I found the flavour too strong. I opted to leave out the sesame seeds and increased the psyllium husk instead. I also added a small amount of onion powder to the base.

For the filling, I added some speck which is a smoked meat from Sudtirol in Italy and red onion instead of white. Ok enough chat, let’s go!

My take on Keto Quiche:

Ingredients

Pie crust

  • 150g almond flour
  • 10g ground psyllium husk powder
  • ½ tsp salt
  • 1 egg
  • 60 g butter
  • ½ tsp onion granules

Filling

  • 30 g butter
  • 300g Speck (you can use any pancetta or smoked bacon pieces)
  • 1 red onion
  • 1 tsp dried rosemary, thyme, parsley and majoram
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 50 ml heavy whipping cream ( I reduced this from the original because of my digestion issues with cream)
  • 225 g shredded cheddar cheese
  • 5 eggs

Instructions

Preheat the oven to 175°C 350°F) . Mix all ingredients to the pie crust in a food processor into a firm dough.

Spread out the dough with well-oiled hands or a spatula in a springform. Place parchment paper between the ring and the bottom to make it easier to loosen the baked pie.

Let sit in the refrigerator while you prepare the filling.

Chop the onion finely and dice the bacon. Fry in butter until onion and bacon has turned a nice color. Add spices and stir. Add to the pie crust.

Whisk together remaining ingredients and pour on top.

Bake on middle rack for 45 minutes or until the pie has turned a nice color. Probe with a knife to make sure the egg mixture is solid if you are unsure.
