When I ask my clients “what do you miss most?” the answer is always one of two things: Chocolate or bread. Giving up these things when you start keto can be one of the biggest mental blocks. What if I told you that you could still have bread on keto?  Wait now before you get too excited it’s not the kind of bread you’re used to. This keto bread does take a bit of adjustment but when you’re looking for warm toast with runny melted butter this will exceed your expectations. Better still, it’s super quick and super simple to make. This one dish bread is perfect for busy lives.

Makes 1 portion of keto bread – 3g of net carbs

Ingredients:

30g of ground almonds

5g of ground flaxseed (if you wish to omit these use 35g of ground almonds)

1 teaspoon of melted butter

1/4 teaspoon of baking powder

pinch of salt

1 egg

Method:

Put it all into a square glass microwaveable dish and mix. Microwave on high for 90 seconds although microwaves differ so you may need a little more or less time.

That’s is. Easy right? I like to slice it into 3 (I use a smaller dish to get a bigger height slice) and pop it under the grill for a tasty crunch toast. I use this bread to make soldiers to dip in runny egg, toasted bacon sandwiches, grilled cheese and you can even put it in the blender once it’s cold to make “breadcrumbs”. If you like you can add some onion or garlic powder or any herbs you like. If the mixture is too dry add a liquid such as more melted butter, coconut oil, unsweetened almond milk or even water until the mixture is a bit more moist.
